Roasted New Potatoes with Garlic and Parsley Garnish

 


Use two medium new potatoes per serving.

Clean the potatoes and cut off any dark spots. Slice the potatoes in half (or quarters if using larger potatoes) and pat dry. Toss the potatoes with olive oil, duck fat or butter, salt and pepper. Put the potatoes flesh side down in a pan and sear the potatoes till golden brown. Put the pan in a preheated 375F oven for approximately 20-30 minutes until cooked to desire internal texture. After 10 minutes you can add some chopped garlic.

Note: There are many temperature variations that can be used to roast potatoes. Some recipes call for 500F in the low rack of the oven for a quick roast and moist center. When using this method remember not to use a nonstick pan in the oven (do not go above the manufactures recommended temperature). When cooking the potatoes at 500F make sure to rotate and check onthe potatoes every 5-10 minutes.
