are usually held outdoors in the US,
although many large farmers markets
have permanent indoor settings. These
markets produce are renowned for for
being locally grown and very fresh.
Since their products are locally grown,
they can pick the produce at the peak
of flavor, preserving their nutrition
content . Many farmers markets feature
produce that is organically grown.
markets have increased in numbers
recently in part to an increased interest
in heathier foods, a greater desire
to preserve local types of cultivars
and an increaed understanding of of
the importance of maintaining small,
sustainable farms. Farmers' markets
in the US have grown from 1,755 in
1994 to 4,385 in 2006 as reported
by the Department of Agricuture (See
graph ), In New York City, there
are currently 44 markets in operation
fitting this description.
