                                  of carrots beetsolive oil
 butter (optional)
 finely diced selection of herbs
 salt and pepper
   Preheat 
                                  the oven to 400 degrees F.  Put 
                                  all the vegetables into two separate baking 
                                  dishes. Season well with salt and black pepper, 
                                  drizzle with olive oil and toss them well to 
                                  coat evenly. Start the saute on top of the stove 
                                  to caramelize lightly and then put the baking 
                                  dishes in the preheated oven and cook, stirring 
                                  the vegetables occasionally, until they are 
                                  tender and golden brown, about 35 minutes.    Note: 
                                  to prevent carrots from turning red it is best 
                                  to saute the two separate. They can be put in 
                                  the same baking dish in the oven but should 
                                  be kept on opposite sides. Roasted 
                                  beets and carrots go well with a miso butter 
                                  sauce.
