Tuscan Kale Salad with Sautéed Shiitake Mushrooms and Parmesan Shavings -- Balsamic Vinaigrette

Note: Tuscan Kale has a nice sweet flavor and pairs well with these ingredients. Keep the mushrooms crunchy to add texture to the dish. This vegetable does not wilt after addition of the dressing.

 


Service for 4

1 Head Tuscan Kale
1/2 pound sliced Shiitake Mushrooms
Parmesan Cheese
1 T olive oil
Balsamic Dressing Recipe for 4

 

Method:

Wash and thinly slice the kale. Sauté the shiitake mushrooms in 1 T olive oil till nicely brown and slightly crunchy. Dry and reserve the mushrooms on a paper towel set on a rack to remove excess oil and leave allow for a crunchy mushroom. Thinly slice Parmesan cheese using a knife or truffle slicer. Prepare a balsamic vinegar to your taste. Combine ingredients...see photo.
